Happy 4th of July

Happy 4th of July! This is my attempt at making a red, white and blue pancake breakfast. I added red food coloring to half of the batter, but it just ended up looking pink instead 😦 I think the correct way to do it is to make pancakes and red velvet cakes to get that truly deep red color, but I wasn’t in the mood to make anything sweeter than a pancake for breakfast. So here it is!

We had one of those wonderful long weekends that you wish you could replicate every week. We did a mix of ordinary (walks around the neighborhood, going to the park, buying food at the farmers market) with the not-so-ordinary (dimsum breakfast, Fourth of July Parade, walking along the pier). We even got a visit from my mom! LO and my mom were cracking each other up because my mom would say “badada” and LO would laugh hysterically. My theory is that he combined “banana” and “dada” and thinks it’s just hilarious that he was able to combine the two.

We still aren’t taking LO to see fireworks, which is a pity because our city’s fireworks is by far the best I’ve ever seen. You get to lie down in a huge high school field and see the fireworks explode right above you. But we’re still pretty stuck on a bedtime, and I don’t remember the last time LO was up past 8pm. The other huge obstacle is the parking fiasco with the venue. The last time we were there, they had us tandem park, and it took about an hour to finally leave. That absolutely wouldn’t work with us in case LO gets hysterical or wants to go home.

So for now we celebrated with a simple parade and a walk on the pier. And we had three whole days with each other.
